Roasted pumpkin seeds with salt # 7


Having some pumpkin seeds stoved away in the cabinet is a great resource, especially when you run out of snacks and don´t feel like going to the store. Pan roasting the seeds with some salt make them really tasty and you can additional flavors if you like, why not some chili flakes or smoked salt. Consider this a basic recipe and roast more than you think you´ll need, any leftovers can be used for salads or maybe some other snack night.

Roasted pumpkin seeds with salt

Pumpkin seeds
Olive oil
Salt

Heat a pan and roast the pumpkin seeds for a few minutes, add a few drops of olive oil and season with salt.
These seeds is great served slightly warm but if you get some left over they are great for topping salads or soups.

Tomato, arugula, parmesan cheese, red onions # 6


A great tomato salad always come down to chosing great tomatoes, if that is taken care of you can add almost anything and you´ll know it will taste great. These are actually my home grown tomatoes so they are all in different shapes and sizes that actually makes the dish better. The good thing is that all the tomatoes doesn´t need to be perfectly ripened, if you add a few green ones they will have a totally different taste and texture that will create a fun contrast when you are eating.

Tomatoes
Arugula
Parmesan cheese
Red onions
Balsamic vinegar
Olive oil
Salt, pepper

Cut tomatoes, shave the parmesan, slice the onion. Arrange tomatoes, cheese, onions. Garnish with arugula, vinegar, olive oil. Season with salt and pepper.

japanese soy sauce

Sear or grill the beef, slice the carrots thin. Slice the beef and season with salt, pepper and soy. Garnish with carrots, cilantro and sesame seeds.

Edamame beans with salt

Besides being delicious Edamame beans is also a healthy and great snack that you can serve in a million ways, but I usually end up with this simple recipe.

Edamame beans
Salt
Olive oil

Boil the beans in salted water for 1-2 minutes, drain and toss with salt and olive oil.

Roquefort cheese with rosehip marmalade # 3


Roquefort cheese is one of the kings of cheese and have you tried it once you´ll problaby love it forever, unless you´re a child because then you are likely to hate it. The best way to eat it is with a simple marmalade and for this I bought a really good rosehip marmalade but you can replace it with other types if you can´t find a rosehip one. For example pear, fig and apple are also great friend of the Roquefort cheese.

If you are serving a lot of tapas it can also be fun to mix it up with an unexpected dish like this one since you usually serve it after or at the end of a meal.

Black pepper

Cut the cheese in small pieces, put a spoonful of marmalade on each piece, season with black pepper. Serve at room temperature to make sure you´ll get the best flavor.

Beef with dijon mustard & red onion # 2


Seared beef with dijon mustard and some fresh sliced red onions, sometimes that´s all it takes to make a great tapas. Make sure you pick a high quality meat, since it´s served as a small tapas it won´t cost a lot to get a higher quality piece.

Dijon mustard
Red onion
Parsley
Olive oil
Salt, Pepper

Seare or grill the beef and then cut into small slices, put som dijon mustard on each piece. Slice the onion and chop the parsley finely. Arrange on top, season with salt and peppar and some olive oil. Serve as a great tapas.




Salami with manchego cheese & arugula # 1


A great and easy way to serve Salami, make sure you pick a high qulity Italian salami and some good Kalamata olives and you won´t be dissapointed.

Italian milano salami
Manchego cheese
Fresh arugula
Salt, black pepper
Kalamata olivs
Olive oil

Slice the salami and cheese in small pieces, put the cheese and olive on top of an slice of salami, season with salt and pepper, drizzle with olive oil and finish off with som leafes of arugula.
