Seared salmon with dill butter & lemon sourcream

Fresh salmon
Dill
Butter
Lemonjuice
Sourcream
Salt & Pepper

Cut the salmon i small cubes and sear in butter or oil, season with salt and pepper. Mix the sourcream with lemonjuice salt and pepper. Melt the butter and mix with chopped dill, arrange the salmon with some sourcream and pour some dillbutter over the salmon.

Fry the duck breast and leave to cool. Cut the apple in strips, blend with dijon mustard, olive oil, season with salt and pepper.

Roasted red peppers with fuet salami # 19

Tapas

Red peppers are a great vegetable that can be used for loads of great recipes, but there is one important thing that you´ll need to do at that is to roast them. Maybe not if you´re making a salad or putting them in a sandwich but as soon as you need some extra flavor or serving them warm you should always roast them. I transforms the flavor completely and it´s almost like a different vegetables. In this recipe i simple roasted them cut in pieces in a frying pan but the classic way is to roast them whole covered in a little bit of oil on high heat in the oven or on a grill. Either way, the peppers will taste great, good luck!

Roasted red peppers with fuet salami

Oil

Cut the peppers in chunks and roast in a pan until cooked, slice the fuet. Arrange each piece of pepper with a slice of fuet and parsley, season with salt and pepper.

Chopped shrimps with chili, dill and radish

Peel and chop the shrimps, chop the chili and dill and mix with the shrimps, season with lemon juice, salt and pepper. Slice the radish and arrange some of the shrimps with one or two slices of shrimps and teaspoons.

Cut the cucumber i dices and season with salt and lemon juice, leave cold for one hour. Chop the dill and add to the cucumber. Slice the radish and put one cube of cucumber on each slice, season with black pepper.

Japanese soy sauce
Honey
Sesame seeds
Salt, pepper

Fry the duck breast until medium rare, make sure to fry the fat until crispy. Set aside and leave to cool. Whisk soy with honey to a sweet and salty sauce. Cut the carrots and slice the duck breast. Serve each slice with carrot, soy and honey sauce and sprinkle with sesame seeds.

Boil the eggs the way you like them, fry the bacon until crisp. Half the eggs and add mayonnaise, bacon and some roughly chopped leafs of parsley, season with salt and pepper.

Shaved gruyere cheese & roasted buckwheat

Gruyere cheese
Buckwheat seeds
Olive oil
Black pepper
Butter

Boil the buckwheat in salted water until cooked through, rinse under cold water and drain. Fry the buckwheat in butter until golden, discard the butter and leave the buckwheat to cool.

Shave the cheese and sprinkle the buckwheat over, add black pepper and olive oil.

Bread

Roast the bread, mix beans with garlic, parsley and some olive oil. Season with salt and pepper, adjust the thickness of the dip with water if neccesary.

Peel and cut the carrots and roast them in a pan in some olive oil for a few minutes, do not cook through, they need to have a crunch left to be good. Cut pieces of feta cheese an put on the carrots, chop som parsley and put on top. Finish off with olive oil, salt and pepper.

Radishes with cream cheese & herbs # 11


Raw radishes are a highly underrated vegetable, best thing is you don´t really need to that much to turn in into a good snack. Here I rinsed them in cold water served them with a flavored cream cheese. I am serving them with some of the green left on, it taste good and you can use the entire leaf if you like.

Radishes with cream cheese & herbs

Fresh radishes
Cream cheese
Chives, dill, parsley
Salt
Olive oil

Rinse the radishes, mix cream cheese with herbs some olive oil and a pinch of salt. Spread each radish with some cream cheese and serve.

Eggs with shrimps & dill # 10


Eggs is one my all time favorite ingredients, it can be used for so many great dishes like omelet, scramble, poached or just boiled, peeled and served with some shrimps, dill and mayonnaise like this. This is a perfect snack for buffets and in Sweden they are often part of any Christmas buffet but they are great all year round.

There is not much skill needed to make this recipe but that´s a great thing if you are preparing a full buffet or prefer to have the time to share a drink with your guest instead of being stuck in the kitchen. Get some good shrimps, buy a good mayonnaise (yes of course you can make your own but sometimes we need be thankful that there are good products to buy as well right?) and a few stalks of fresh dill. Then put it together, that´s it!

Boil the eggs, peel and cut in half. Spread som mayonnaise on each half, top of with shrimps and fresh dill, season with salt.

Roasted red peppers with feta cheese and parsley # 9


As simple as it is delicious, roasted peppers turn a not that special ingredient into something really great as soon as you roast it and it doesn´t matter how you do it, you can roast it in a pan, on the grill, in an oven or even using a blowtorch or putting them on the burner in case you have a gas stove. Then peel it or even leave a bit of the charred skin on an it will taste completely different.

Of course there are dishes where you want a raw pepper but for most warm or mediterranian dishes i prefer the roasted kind. For the feta cheese I always try to go for the real thing, that is Greek feta, it is by far the safest choiche, but if you have a good cheese shop around then it can be worth a shot to ask if they have any local varieties. I have had the pleasure of tasting some non Greek feta cheeses that have been of super high quality so it is worth a try. Ok, let´s make some tapas!

This recipe is all about the figs, make sure you get great sweet ones. If you can´t get hold of any then save this recipe for another day and make another cheese recipe, perhaps some goat cheese on toast.

Slice the figs, put a piece of gorgonzola on each slice. Top of with a small spoon of honey, season with black pepper.
