Proscuitto with sundried tomatoes & manchego cheese

Proscuitto

Mangchego cheese
Olive oil, optional

Cut the proscuitto in to small squares, cut the tomatoes in pieces a little bit smaller than each piece of ham. Put tomatoes on the proscuitto and grate a generous amount of manchego on top. Add a few drops of olive oil on top.

Ribs with lettuce and tomatillo & chipotle sauce

Thick pork ribs
Salt, pepper
Honey
Paprika powder
BBQ Sauce (your favorite kind)
Oil

Rub the meat with salt, pepper, honey and paprika, add a couple of spoons of BBQ sauce and roast the ribs until tender in an oven. Take out and let cool, cut in to bite size pieces and roast with a little bit of oil.

Fresh tomatillos
Chipotle chili or chipotle paste
Garlic, one small clove for each tomatillo
Water
Salt, pepper
Sugar
Lettuce

Roast the tomatillos and garlic in a pan or grill until soft and with some black spots. Put the tomatillos, garlic, a little bit of chipotle in a blender and blend almost smooth. Season with more chipotle, a little bit of sugar, salt and pepper. Serve at room temperature.

Chop the lettuce and arrange the pork together with some sauce and lettuce.

Black pepper
Lemon

Roast the beets with the skin on i oven on medium heat until cooked through. Peel the beets and slice in thick slices. Marinate the beets with some olive oil, lemon juice, salt and pepper.

Cut the cheese in pieces, place one piece of cheese on top of each slice of beet and add a little bit of oil and some black pepper.

Cold smoked salmon
cucumber
fresh dill
wasabi pearls
olive oil
salt, pepper

Slice the salmon thinly and in bite size pieces, peel and dice the cucumber and combine with finely chopped dill. Season the cucumber with salt  and blackpepper and a few drops of oil.

I found the wasabi pearls at a local grocery store and haven´t seen it anywhere else (yet). So if you can´t find any you can either season the cucumber with a little bit or spread a thin layer on each piece of salmon.

Or if you´re feeling very ambitious you can make some of your own with a little bit of molecular help, if so google for the recipe. For the flavor it won´t make much of a difference but they sure look great.

Finally put some cucumber on top of each salmon and some pearls on top.

Roast the potatoes whole in an oven until done. Leave to cool and fry the bacon until crisp. Cut the potatoes in half and put a piece of bacon on each half. Put a spoonful of sourcream on top of the bacon, add finely diced onion and chives.

Serrano ham

Take on tortilla and put sliced serrano ham and grate cheese on top. Put another tortilla over and then heat the tortilla in a frying pan until the cheese melts. You can also grill or heat the tortillas in an oven.

After the cheese has melted cut the tortillas in bite size pieces.

Fresh broccoli
Mayonnaise
Sriracha sauce
Salt, pepper
Oil

Cut the broccoli in bite size pieces, roast the broccoli on one side until brown. What you´re looking for is the get the taste of both roasted and slightly raw, this is also great for the texture. Season the broccoli with salt and pepper.

Combine mayonnaise and sriracha sauce, if you don´t have sriracha you can use any hot sauce you like, it works great with tabasco for example.

Fresh Chèvre (goat cheese)
toast bread
liquid honey
red vine vinegar
parsley
butter

Slice the chèvre cheese in slices, cut circles of the bread in a slightly bigger size than the cheese. Combine honey, vinegar and chopped parsley.

Fry the slices of bread in a pan with butter until golden. Put a slice of cheese on each toast and bake in the oven on high heat until golden. Pour the honey/vinegar mix on top before serving.

Chili flakes

Combine soy with honey and brush the ribs with the marinade. Roast the ribs in oven on medium heat until tender, for me this usually takes between 2-3 hours. Brush the ribs every twenty minutes until done.

Take out the ribs and let cool down, then cut between bones and brush one more time, sprinkle with chili flakes and chopped cilantro. Serve varm.

Foie gras have been a subject of some controversy the last few years, I won´t go into that discussion, everyone gets to set their own standards on whats ok or not. What is under no debate is that the taste is amazing so here´s a super simple recipe that still has everything it needs.

Well it won´t get any easier than this but who says you have to do everything yourself, simply cut and toast the bread, cut a generous piece of paté and put on each piece of bread. Top with a spoonful of rosehip jam.

If you can´t find the jam then just replace it with your favourite, other great flavors is fig, apple, pear for example. Good luck.

Grilled spring onions with butter & japanese soy 

Very simple and delicious, this also works really well as an side for meat och fish dishes.

Spring onions
Butter
Japanese soy
Salt, pepper
Oil

Trim the onions and brush them with oil, grill on high heat until soft. Set aside. Brown the butter in a pan until golden, remove from the heat and add about the same amount of soy as you have butter. Plate the onions and pour the butter and soy on top, season with salt and pepper.
