10 Easter appetizers!

Easter is up and what better way to spend it but eating loads of delicious food. I´ve put together some of my spring and easter favorites into this great collection, after each photo there is a link where you will find the recipe, now go cook and have a great easter!

Crayfish lasagna with asparagus & garlic #163


This is barely a lasagna but since I used lasagna pasta and it is served in layers I still chose to call it a lasagna. You can of course serve it with regular pasta and you can of course make it bigger and serve it as a main course. I prepared all ingredients before cooking the pasta since the pasta is a central ingredient in the dish it would be ruined if it were to get overcooked. 

Crayfish lasagna with asparagus & garlic

cooked crayfish tails
asparagus
garlic
cream
milk
salt, pepper
olive oil
spinach and or other leaf vegetables
Parmesan cheese
lasagna pasta

Peel and slice garlic and saute in olive oil for a few minutes, add milk and cream and season with salt and pepper. Blend into a creamy garlic sauce, set aside. Rinse the spinach and drain the crayfish tails (if they were sold in liquid). Slice the asparagus and parboil in salted water. Boil the pasta until almost done (it will get done once everything is plated). 

Add one layer of pasta and then add the asparagus, crayfish and then repeat for as many layers as you like. Whisk the sauce and pour on top and add a little bit of salt, pepper and grated Parmesan, serve.

Scrambled egg with dill marinated crayfish and sour cream #107


If you add eggs to anything it´s more or less impossible to fail, it goes great with seafood as well. This recipe is more or less a standard scramble with salted crayfish tail that I marinated with fresh dill and a little bit of lemon juice. The sour cream add a little bit of acidity and it´s nice to serve something cold to a mostly hot dish.

Scrambled egg with dill marinated crayfish and sour cream

eggs
cream
crayfish tails
fresh dill
lemon
sour cream
salt, pepper

Chop the dill and combine withe the crayfish tails and a little bit of lemon juice. Scramble the eggs in a pan with a little bit of cream on medium heat until it´s creamy. Season the eggs with salt and pepper. Serve the scramble warm with the crayfish and sour cream on top.

Crayfish salad with dill on toast #71



Well as far as crayfish go it doesn´t get much easier than this, boiled crayfish tails with mayonnaise, fresh chopped dill and a splash of lemon juice.

mayonnaise
fresh dill
lemon juice
salt, pepper
toast

Combine the crayfish with the mayonnaise, use about one part mayonnasie for three parts crayfish, add the roughly chopped dill and some lemon juice. Toast the bread and cut into triangles and add the salad.

Crayfish with crostini & chili mayonnaise # 44

Crayfish

This is a great way to serve cooked shellfish, if you can´t find crayfish than just replace it with your own favorite, crab or shrimps works great for example.


Crayfish with crostini & chili mayonnaise

Baguette
Peeled cooked crayfish
Mayonnaise
Tabasco
Dried chili flakes
Romano lettuce
Salt, pepper
Parsley

Slice the baguette and toast the bread. Combine mayonnaise with tabasco and chili flakes, season with salt and pepper. Chop the lettuce, spread some chili mayonnaise on each slice of toast, put lettuce and crayfish tails on top. Sprinkle with salt, pepper and some chopped parsley.

Spicy crayfish # 31


Spicy crayfish

Cooked crayfish
Oil
Parsley
Garlic
Fresh chili
Onion
Paprika powder
Salt, pepper

Split the crayfish in half, chop the onion and slice the garlic and chili. Heat oil in a pan an fry the chili, onion and garlic for about a minute, turn up the heat and add the crayfish and spices. Roast for about thirty seconds constantly stirring. Serve.
