Bresaola with Parmesan cheese, arugula & pumpkin seeds #134


Bresaola is such a good product that there is no need to complicate things, thin slices served with fresh arugula, shaved Italian Parmigggiano Reggiano, some olive oil and a few roasted pumpkin seeds for a bit of crunch and you are good to go.

Bresaola with Parmesan cheese, arugula & pumpkin seeds

Bresaola
Parmiggiano Reggiano
arugula
pumpkin seeds
salt, black pepper
olive oil
lemon or vinegar (optional)

Roast the pumpkin seeds in a dry pan or the oven until they are getting a bit brown on each side. Arrange the Bresaola on a plate, combine the arugula with a little bit of olive oil and a little bit of vinegar or lemon juice if you like a little bit of acidity. Shave the Parmesan cheese and then put the salad, cheese and pumpkin seeds on top of the Bresaola. Serve.

Manchego with honey & pumpkin seeds # 66


Manchego with honey & pumpkin seeds 

Simple and great way to eat cheese, this recipe works great for other types of cheese as well so feel free to exchange the manchego for pecorino, parmiggiano or other hard salty varieties.

Manchego cheese
honey
olive oil
balsamic vinegar
pumpkin seeds
black pepper
salt

Slice the cheese in bite size pieces, combine honey with olive oil and vinegar. Toast the pumpkin seeds in a dry pan until golden. Add some salt and black pepper.

Roasted pumpkin seeds with salt # 7


Having some pumpkin seeds stoved away in the cabinet is a great resource, especially when you run out of snacks and don´t feel like going to the store. Pan roasting the seeds with some salt make them really tasty and you can additional flavors if you like, why not some chili flakes or smoked salt. Consider this a basic recipe and roast more than you think you´ll need, any leftovers can be used for salads or maybe some other snack night.

Roasted pumpkin seeds with salt

Pumpkin seeds
Olive oil
Salt

Heat a pan and roast the pumpkin seeds for a few minutes, add a few drops of olive oil and season with salt.
These seeds is great served slightly warm but if you get some left over they are great for topping salads or soups.
