Smoked salmon with horseradish cream, chive oil, dill, radish #178


Smoked salmon can be used in so many ways so if you get stuck in your cooking and need to come up with something new then getting some smoked salmon might be a good idea, it is very versatile and can be used for pastas, garnish soups, appetizers, pizza and sandwiches. This time I was in the mood for a fresh spring or summer appetizer so I made a horseradish cream, added a simple chive oil, a bit of dill and to add some crunch some raw radishes, that´s all it need!

Smoked salmon with horseradish cream, leek oil, dill, radish

smoked salmon
creme fraiche
horseradish
fresh chives
dill
olive oil
salt, pepper
radishes

Peel and grate the horseradish and combine with some creme fraiche, I use about 1 part horseradish to 6 parts creme fraiche, season with salt and pepper. Leave to rest for about one hour to two hours. Do not add any extra horseradish if you think it is to bland because the flavor will get stronger after marinating.

In a blender mix the chives with a little bit of olive oil, salt and pepper, wash and cut the radishes into thin strips. Add the smoked salmon to a plate, add the horseradish cream, chive oil, some dill and the radishes, serve!

Easter is up and what better way to spend it but eating loads of delicious food. I´ve put together some of my spring and easter favorites into this great collection, after each photo there is a link where you will find the recipe, now go cook and have a great easter!

Salmon with cucumber, dill & wasabi pearls # 53



Salmon with cucumber, dill & wasabi pearls

Cold smoked salmon
cucumber
fresh dill
wasabi pearls
olive oil
salt, pepper

Slice the salmon thinly and in bite size pieces, peel and dice the cucumber and combine with finely chopped dill. Season the cucumber with salt  and blackpepper and a few drops of oil.

I found the wasabi pearls at a local grocery store and haven´t seen it anywhere else (yet). So if you can´t find any you can either season the cucumber with a little bit or spread a thin layer on each piece of salmon.

Or if you´re feeling very ambitious you can make some of your own with a little bit of molecular help, if so google for the recipe. For the flavor it won´t make much of a difference but they sure look great.

Finally put some cucumber on top of each salmon and some pearls on top.

Seared salmon with dill butter & lemon sourcream # 21


Seared salmon with dill butter & lemon sourcream

Fresh salmon
Dill
Butter
Lemonjuice
Sourcream
Salt & Pepper

Cut the salmon i small cubes and sear in butter or oil, season with salt and pepper. Mix the sourcream with lemonjuice salt and pepper. Melt the butter and mix with chopped dill, arrange the salmon with some sourcream and pour some dillbutter over the salmon.
