Smoked salmon with horseradish cream, chive oil, dill, radish #178


Smoked salmon can be used in so many ways so if you get stuck in your cooking and need to come up with something new then getting some smoked salmon might be a good idea, it is very versatile and can be used for pastas, garnish soups, appetizers, pizza and sandwiches. This time I was in the mood for a fresh spring or summer appetizer so I made a horseradish cream, added a simple chive oil, a bit of dill and to add some crunch some raw radishes, that´s all it need!

Smoked salmon with horseradish cream, leek oil, dill, radish

smoked salmon
creme fraiche
horseradish
fresh chives

salt, pepper

Peel and grate the horseradish and combine with some creme fraiche, I use about 1 part horseradish to 6 parts creme fraiche, season with salt and pepper. Leave to rest for about one hour to two hours. Do not add any extra horseradish if you think it is to bland because the flavor will get stronger after marinating.

In a blender mix the chives with a little bit of olive oil, salt and pepper, wash and cut the radishes into thin strips. Add the smoked salmon to a plate, add the horseradish cream, chive oil, some dill and the radishes, serve!

Smoked salmon with dill, cucumber & horseradish #171


Smoked salmon is always great but I think it´s the best served during spring and summer. For this recipe I made some simple vegetables that I topped the salmon with, cucumber marinated with fresh dill since dill and salmon go together like.. well dill and salmon. Also I put some julienne of radishes on top, this adds some more texture and I like a little bit of extra color. Then some extra dill and fresh grated horseradish on top.

The way I present this dish is a really small snack size but you can of course make it bigger and serve it like a big appetizer carpaccio style. Other ways to variate this dish is to instead of serving it with fresh horseradish you can make a horseradish cream simply by combining the horseradish with some creme fraiche and season with salt and pepper.

Oh, one more thing, smoked salmon works great with potato salad, so you could make this recipe into an main course by adding potatoes to the vegetables and serving the salmon on the side. With an extra sauce or two, some bread and a glass of white wine this could turn into and perfect weekend lunch. Oh well, here´s how to do it.

Smoked salmon with dill, cucumber & horseradish


smoked salmon, sliced. Buy from somewhere great, mine is Norwegian from a Swedish supplier.

salt, pepper
olive oil

Peel and split the cucumber in half, dice the flesh into small cubes, add a little bit of olive oil some chopped dill, salt and pepper. Cut the radishes into julienne, add the cucumber and radishes to the salmon, grate horseradish on top, add a few drops of olive oil and a little bit of pepper. No salt should be necessary since the smoked salmon is usually salty enough. Serve straight away, good luck.

Spinach salad with capers, Parmesan cheese and radishes #169


This is one of my absolute favorite salads, mostly because the first time I made it was using vegetables that I grew myself. After living in an apartment for years and not having the luxury of being blessed with a garden me and my family decided to move to a house in a smaller town. This blessed us with a garden and it was one of the first things I started working on (even though there were load of other more important things to do) and about a month or two later i pulled my first radishes and baby spinach out of the land and went for a treasure hunt in my fridge. 

I came across some left over capers and I always try to have some Parmesan at hand so I combined it all and dressed it with only olive oil, red wine vinegar, salt and pepper. One of the greatest salads I´ve ever come up with. And it´s not only memories that make it great, I´ve done many times after using both home grown and bought ingredients and it great every time, so go make some!

Spinach salad with capers, Parmesan cheese and radishes

baby leaf spinach
radishes
Parmesan cheese
capers
olive oil
red wine vinegar
salt
pepper

Rinse the spinach and radishes, slice the radishes as thin as you can. Dress the spinach with olive oil and vinegar. Plate the spinach and put the sliced radishes on top. Shave some Parmesan on top and add the capers. Season with salt and pepper and add a few extra drops of olive oil.

Chopped shrimps with chili, dill and radish

Cooked shrimps
Chili
Dill
Radish
Lemon
Salt, pepper

Peel and chop the shrimps, chop the chili and dill and mix with the shrimps, season with lemon juice, salt and pepper. Slice the radish and arrange some of the shrimps with one or two slices of shrimps and teaspoons.

Cucumber with radish, dill & lemon # 17


Cucumber with radish, dill & lemon

Salt
Black pepper

Cut the cucumber i dices and season with salt and lemon juice, leave cold for one hour. Chop the dill and add to the cucumber. Slice the radish and put one cube of cucumber on each slice, season with black pepper.

Radishes with cream cheese & herbs # 11


Raw radishes are a highly underrated vegetable, best thing is you don´t really need to that much to turn in into a good snack. Here I rinsed them in cold water served them with a flavored cream cheese. I am serving them with some of the green left on, it taste good and you can use the entire leaf if you like.

Radishes with cream cheese & herbs

Fresh radishes
Cream cheese
Chives, dill, parsley
Salt
Olive oil

Rinse the radishes, mix cream cheese with herbs some olive oil and a pinch of salt. Spread each radish with some cream cheese and serve.
