10 Easter appetizers!

Easter is up and what better way to spend it but eating loads of delicious food. I´ve put together some of my spring and easter favorites into this great collection, after each photo there is a link where you will find the recipe, now go cook and have a great easter!

5 great egg recipes served as Tapas!

Eggs are one of my favorite ingredients, you can use it in endless ways and it´s both great tasting and looking. I´ve selected my five favorite tapas recipes where the egg is the focus of the dish. I really like to serve eggs as the main part of a snack dish since the size is usually great for one egg for each serving and you can add so many great things.

So expect more egg recipes to be coming to Delicious Tapas shortly, until then here are my favorites so far.

Starting simple with boiled eggs with mayonnaise, shrimps and dill.
Eggs with shrimps and dill



Scrambled eggs in the shell with truffle oil and croutons.



Grilled onion, parsnip puré and olive oil poached egg yolk.

Soft boiled egg with broad beans & shrimps #110



Well not much effort goes into this recipe but that´s one of the charms of tapas, you can keep it as simple as you like. I used frozen broad beans when I made this and I think they work great but if you have fresh ones then you should of course use them.

Soft boiled egg with broad beans & shrimps

eggs
dill
broad beans
fresh shrimps
salt

Boil the egg until soft and peel and plate it, quickly boil the beans and put on top of the egg with the shrimps and garnish with some fresh dill. Done.

Salad with shrimps, fennel, carrots & orange #109

A newly discovered salad for me, I tried similar salads before especially with oranges and carrots but the addition of fennel and shrimps took it to another level. Serve it on it´s own or as an side or on a buffé table.

Salad with shrimps, fennel, carrots & orange

carrots
fennel
fennel dill
oranges
olive oil
salt, black pepper
fresh shrimps

Peel the shrimps, peel and shave the carrots. Pick the dill from the fennel and then slice it thin. Cut away the peel from the orange and cut fillets. Squeeze what´s left of the orange and combine the orange juice with some olive oil, a little bit of salt and black pepper. Combine all ingredients and season to taste. Serve.

Ceviche marinated shrimps with mango & cilantro #82


Fresh mango with lime marinated shrimps, a great appetizer for summer. Keep in mind that since I´m using cooked shrimps for this recipe you shouldn´t marinate the shrimps for to long or they will get dry, a few minutes is enough.

So if you want to prepare it just do the marinade and peel the shrimps and combine a few minutes before it´s time to serve.

Ceviche marinated shrimps with mango & cilantro

cooked shrimps
fresh lime
cilantro
red chilies
fresh mango
red onion
olive oil
salt, pepper

Peel the shrimps, finely chop the chili, cilantro, red onion and combine with some fresh lime juice, season with a few drops of olive oil, salt and pepper.

Peel and slice the mango and then cut into rectangles, arrange the shrimps on top of the mango and decorate with a few leafs of cilantro and a wedge of lime.

Langoustines in chili butter and spinach

Langoustine tails, cooked and peeled
butter
fresh red chili
baby spinach
chives
lemon
salt, pepper

A very simple and delicious way to spice up langoustine, you can also do this with raw langoustines. Take out the shrimps about half an hour before serving so it´s not ice cold.

Rinse the spinach, slice the chili and chives. Brown butter in a pan and add the chili, let cook without burning for about 30 seconds squeeze in some lemon juice, season the butter with salt and pepper.

Put some spinach in the bottom of a plate, add the langoustine tails and sprinkle with chives, pour over the browned chili butter, serve.

Toast skagen

This is problaby the most common starter in Sweden and there are some variations but in a good one there´s usually only shrimps, mayonnaise, dill, lemon, salt and pepper, in supermarkets and cafés you´ll find all sorts of stuff in it so make your own.

One thing that is missing from mine is a healthy spoonful of bleak roe that you top it off with but I skipped that this time. I also grated in some fresh horseradish.

Mayonnaise
Fresh peeled shrimps
Lemon
Horseradish
Salt, pepper
Dill
Bread

Roughly chop the shrimps and dill, add mayonnaise and combine. Season with horseradish, lemon, salt and pepper. Toast the bread, cut som wedges of lemon, put the skagen on the toast, garnish with dill and lemon.

Chopped shrimps with chili, dill and radish # 18


Chopped shrimps with chili, dill and radish

Cooked shrimps
Chili
Dill
Radish
Lemon
Salt, pepper

Peel and chop the shrimps, chop the chili and dill and mix with the shrimps, season with lemon juice, salt and pepper. Slice the radish and arrange some of the shrimps with one or two slices of shrimps and teaspoons.

Eggs with shrimps & dill # 10


Eggs is one my all time favorite ingredients, it can be used for so many great dishes like omelet, scramble, poached or just boiled, peeled and served with some shrimps, dill and mayonnaise like this. This is a perfect snack for buffets and in Sweden they are often part of any Christmas buffet but they are great all year round.

There is not much skill needed to make this recipe but that´s a great thing if you are preparing a full buffet or prefer to have the time to share a drink with your guest instead of being stuck in the kitchen. Get some good shrimps, buy a good mayonnaise (yes of course you can make your own but sometimes we need be thankful that there are good products to buy as well right?) and a few stalks of fresh dill. Then put it together, that´s it!

Eggs
Fresh dill
Mayonnaise
Fresh shrimps
Salt

Boil the eggs, peel and cut in half. Spread som mayonnaise on each half, top of with shrimps and fresh dill, season with salt.
